Comorian language (Shikomori or Shimasiwa) is influenced both Arabic and Swahili. The term “Mabawa” means “Chicken wings” in both Comorian and Swahili. It’s the simplicity grilled over charcoal from side-street vendors.

It is one of principal food which is made from bread fruit in Comoro. It is also eaten in Sao Tome & Principe(>>here). One bakes it in Sao tome, as opposed to it, One peels and fries it after baking in Comoro.

Jobi

It is one of principal food which is made from non-sweet bananas in Comoro. It likes potatoes because it's not dulcy.

Lichi

Although it is one of famous fruit “Lichee” in the world, we can buy it as amaging low price in Comoro. Since Comoro is French related country, peoples say it “Li(li in limit) Chi(chi in chicken)”. I visited Comoro on November, it is good season for Lichi!

Kaki

Kaki (spell unknown) is a thin and slightly sweetened bread. It’s more like a tortilla than a pancake, or some would say more like a crêpe than either a tortilla or a pancake. It is ready-to-eat food sold in a street or market.

Banatam

We can see the people who cook it on the street in Comoro. Mix coconut with sugar, rice powder and water. Put and roll it on the banana leaf(square cut previously), and then roast on the chacoal. It likes just air-containing cookie and has rice taste.

Cafe

This is resembred to Italian espresso. It's different from Madagascar's one. It has dense taste!

Mabawa

I recomend it for someone who wants Mayotte's local food. Mabawa is roasted chicken wing meat. Most of them are imported from Brazil.

Brochette

Brochette is French word which mean roast meat with spit. There are lots of stalls who sale Brochette and potatoes. It is eaten with Putu (hot sause). Some people call Brochette as Nyama, it may be Swahiri influence.

Mbogo or Mfogo

Mbogo is one of the principal food in Mayotte. It is fried cassava root(it is called Manioc in Mayotte because there is French teritorry). They also eat baked one.

Bricapen

Bricapen is one of the principal food in Mayotte. It is fried breadfruit. We can eat it in Saotome-Principe , however Sotome-style one is baked breadfruit (not fried).

Sinior

It is Mayotte 's traditional pan cake. Ingredients are rice, water (mix 2 days before cooking), coconut, sugar and baking powder. It is slightly sweet cake.

Pronunciation is like “Rugai”, it is typical creole (mixture with in and out of African culture) food in Reunion. It is common to Mauritius. Some ingredientes is sauteed with oil, tomato and spices. Garnitions are rice and “Gros poir”(prons : Gro powa), mild curry with big white beans.
